Spicy Cajun Shrimp Boil

Ingredients
2 lbs of large shrimp -- skin on
2 tbsp Old Bay Cajun seasoning
2 tbsp cayenne pepper
1 tbsp black pepper
1 tbsp paprika
½ tbsp lemon pepper seasoning
2-3 sticks of unsalted butter -- depending on your preference
½ cup of water
Lemon -- cut 3 slices
2 corn -- broken into halves
3 hot links -- chopped into pieces
4 red potatoes -- you decide
5 chopped garlic cloves
Preparation
Mix all of the seasoning into a small bowl and set aside.
Rinse shrimp and boil for about 15 minutes WITH the 3 slices of lemon. I like to throw in the corn and potatoes (if there’s room) at the same time to let that cook as well. Once it’s done, drain and set aside.
Using your now empty pot, put in garlic, add 1 tbsp of oil and saute until it starts to sizzle. Add the sticks of butter. Put heat on MEDIUM, let it melt and simmer for 5 minutes. Pour in seasoning with melted butter and stir.
Add shrimp in and the ½ cup of water -- if you see in my pic, the water doesn’t fill the entire pot. Put heat to HIGH.
Dip a spoon in and do a taste test! I like to add some sugar in my shrimp boil and I like it extra spicy hehe.
Cover pot and let it boil for 10 minutes.
Get a bowl of rice and dig in!
Tips:
If it needs more salt, add some! (I usually eyeball my ingredients) 😅
I keep the skin on the shrimp b/c it’s extra juicy when you’re eating it.
I like to pour some of the sauce over my rice while consuming.
I also like to put some sauce into a small bowl so after I peel the shrimp, I can dip it into the sauce.
