Air-fried Breakfast Potatoes

Servings: 2 people

  • 2 red potatoes, 1 white potato

  • 1 teaspoon garlic/onion all-purpose seasoning

  • 1/2 teaspoon garlic salt

  • 1/2 teaspoon paprika

  • Pam or any non-stick spray

  • 2 small bell peppers OR 1 large

  • chopped onions, about 1/4 cup

  • 1 teaspoon cooking oil

The hardest part about making potatoes is we always want them crunchy, but they’re naturally moist on the inside (boooooooo!). Lucky for you, there are 2 options to go about this: you can chop up the potatoes, stack paper towels on them and let them air dry overnight OR you can use an air fryer to sort of ”dehydrate them.” This is how:

• tip: To wash your potatoes prior to cooking, wipe them down with a wet paper towel instead of soaking them in water.

1. After chopping the potatoes thinly, put them into the air fryer and cook at 400°F for 10 minutes. DO NOT add any oil or cooking spray because the purpose is to dry out the potatoes! (See photo below).


2. The potatoes should feel a lot drier, but still soft. This is good because they’re still raw. Spray 1 coat of nonstick cooking spray and pour the seasoning in. Shake up your basket before putting it back in at 350°F for 10 minutes. Check-in after 5 minutes, stir if needed.


3. While the potatoes are cooking, Grab a saucepan and sauté the onions and bell peppers for about 3 to 5 minutes. This helps bring out the flavors before adding it to the air fryer.

4. After the 10 minutes, add in bell peppers + onions and increase heat to 400° F for 5-7 minutes, stirring frequently so the potatoes can cook evenly.

*tip: check frequently to make sure the potatoes are cooking evenly and not getting burned.
